Pudding: Chocolate Pudding

1.In a medium bowl mix together sugar, cornstarch, salt and the cocoa powder too. In another bowl beat egg and add 2/3 cups milk and stir well. Gradually add milk mixture over the cornstarch mixture and whisk to dissolve well. Set aside while you heat the rest of the milk.

2. In a medium sized saucepan bring the rest of the milk (2 cups) to a boil.

3. Remove from heat and gradually add the egg mixture over the hot milk whisking the whole time. Place it over medium heat and cook stirring constantly until the mixture thickens, about 3 minutes. Remove from heat and stir in vanilla extract. Only if needed you can strain it to be sure no lumps have formed.

4. Pour the pudding into six serving dishes, place plastic wrap directly on surface of pudding and chill for at least 2 or 3 hours or serve warm. You can serve with nuts or grated chocolate or fresh fruits.

*You can make this recipe vegan by swapping out a few of the ingredients*

**You can also make this into vanilla pudding but removing the cocoa powder and adding 2 tsps of vanilla extract (you can add vanilla bean to enhance the flavor but that is optional)

Vegan Chocolate Pudding

Instructions

1. In a medium saucepan, sift together sugar, cocoa, cornstarch, and salt.

2. Whisk in almond milk until no lumps remain.

3. Over medium heat, bring mixture to a boil, whisking occasionally to ensure nothing sticks to the bottom.

4. Boil for two minutes, whisking constantly, until mixture thickens.

5. Whisk in vanilla.

Pour into bowls or ramekins and chill until fully set, at least two hours.

The instructions for the vegan recipe are simplified because it doesn’t require you to temper the egg mixture in that is poured in to the boiling milk. Instead you’re adding the ingredients into the saucepan and mixing the milk in and then heating the mixture.

Flan (Egg Custard)

Instructions

1. Preheat oven to 350 degrees F

2. In a medium saucepan over medium-low heat, melt sugar until liquefied and golden in color. Carefully pour hot syrup into a 9 inch round glass (or aluminum) baking dish, turning the dish to evenly coat the bottom and sides. Here is the only tricky part, place the ( inch baking dish inside a larger baking dish filled with ½ inch of water. This is known as water bath.

3. In a large bowl, beat eggs. Beat in condensed milk, evaporated milk and vanilla until smooth. Pour egg mixture into baking dish.

4. Bake in preheated oven 60 minutes. Let cool completely.

5. To serve, carefully invert on serving plate with edges when completely cool.

Chocolate chip cookies

Instructions

1. Preheat oven to 350 degrees F

2. Cream together the butter, white sugar, and brown sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla. Dissolve baking soda in hot water. Add to batter along with salt. Stir in flour, chocolate chips, and nuts. Drop by large spoonfuls onto greased pans.

3. Bake for about 10 minutes in the preheated oven, or until edges are nicely browned.

Peanut Butter Cookies

Instructions

1. Preheat oven to 350 degrees Grease cookie sheets.

2. In a medium bowl, cream together the butter and sugar. Stir in the eggs and vanilla. Combine the flour, cocoa, baking soda and salt, stir into the creamed mixture. Finally, fold in the peanut butter chips. Drop cookies by heaping teaspoonfuls onto the prepared cookie sheets.

3. Bake for 8 to 10 minutes in the preheated oven, until set.

Vegan Chocolate Chip Cookies

Instructions

1. In a large bowl, whisk together the sugar, brown sugar, salt, and coconut oil until combined. Whisk in non-dairy milk and vanilla, until all sugar has dissolved and the batter is smooth. Sift in the flour and baking soda, then fold the mixture with a spatula, being careful not to overmix. Fold in the chocolate chunks evenly.

2. Chill the dough for at least 30 minutes. Preheat oven to 350°F.

3. Scoop the dough with an ice cream scoop onto a parchment paper-lined baking sheet. Be sure to leave at least 2 inches of space between cookies and the edges of the pan so cookies can spread evenly.

4. Bake for 12-15 minutes, or until cookies just begin to brown. Cool completely.

Brownies

Instructions

1. Preheat oven to 350 degrees F . Grease and flour an 8-inch square pan.

2. In a large saucepan, melt 1/2 cup butter. Remove from heat, and stir in sugar, eggs, and 1 teaspoon vanilla. Beat in 1/3 cup cocoa, 1/2 cup flour, salt, and baking powder. Spread batter into prepared pan.

3. Bake in preheated oven for 25 to 30 minutes. Careful not to overcook!

Cheesecake Brownies

Instructions

1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9-inch square baking pan. Combine cream cheese with 1/4 cup sugar and 1 egg in a mixing bowl; beat until smooth. Stir 1 cup chocolate chips into the cream cheese mixture. Set aside.

2. Fill a saucepan with water and bring to a boil. Turn the heat off, and set a heatproof mixing bowl over the water. In the mixing bowl, combine butter with the remaining cup of chocolate chips; stir until just melted and blended together. Stir in the remaining 1/2 cup sugar and 2 eggs, then sift together flour, baking powder, and salt; stir into chocolate until evenly blended.

3. Pour half of the batter into the prepared baking pan. Spread the cream cheese mixture over the chocolate layer. Top with remaining chocolate mixture (this doesn't need to completely cover the cream cheese layer). Using a knife, swirl the top chocolate layer into the cream cheese to make a marble pattern.

4. Bake in preheated oven at 350 degrees F for 25 to 30 minutes, or until top is crinkled and edges pull away from sides of the pan. Cool thoroughly. Cut into 12 to 16 squares. Store in the refrigerator or freeze.

"Vegan Chocolate brownies

Instructions

1. Preheat the oven to 350ºF.

2. Cook water and 1 cup of the flour over low heat, stirring constantly, until it reaches the consistency of a gluey paste (yum).

3. Remove from heat and let cool completely.

4. Mix sugar, salt, vanilla, cocoa powder and vegetable oil, and then add the flour-water mixture.

5. Mix well.

6. Add the remaining 1 cup of flour, plus the baking powder and nuts/chocolate chips.

7. Spread mixture into a greased 11x7-inch pan.

8. Bake at 350ºF for 25 minutes, or until knife inserted into center of pan comes out clean.
